Holiday Recipe: Peeko Oysters savory oyster stuffing

Peeko Oysters proprietor Chris Coyne and his partner, Julie Weisenberg, shared this holiday recipe for savory oyster stuffing. This gem of a recipe will surely delight the guests at your dinner table.

“This is our favorite oyster stuffing recipe,” Weisenberg said told the Gazette.

Peeko Oysters Savory Oyster Stuffing

  • 1 cup shucked oysters, drained and coarsely chopped
  • 1 celery rib, chopped
  • 1 small onion
  • 1/4 cup butter
  • 2 tbsp minced fresh parsley
  • 1/4 tsp poultry seasoning
  • 1/8 tsp rubbed sage
  • 1/8 tsp pepper
  • 3 cups cubed day-old bread or plain croutons of your choice
  • 1 large egg, beaten
  • 2/4 cup chicken broth

Method:

  1. Pre-heat oven to 350°
  2. In a small skillet, sautee celery and onion in butter until tender
  3. Transfer to a large bowl
  4. Stir in the parsley, poultry seasoning, sage and pepper
  5. Add bread cubes
  6. Combine the egg, broth and oysters
  7. Add to the bread mixture, stirring gently to combine
  8. Transfer to a greased 1-qt. baking dish. Cover and bake at 350° for 20 minutes
  9. Uncover; bake 10 to 15 minutes longer or until a thermometer reads 160° and stuffing is lightly browned
